The New Release Of Daftmill’s Wonderful Single Estate Lowland Malt. Francis And Ian Cuthbert Are Making The Most Compelling Malts In All Of Scotland. They Are The Only Operational Farm Distillery Committed To Using Exclusively Their Own Grown Malt With Whisky To Sell (More Distilleries In This Mold Are In The Works, But Still Too Young). They Began Production In 2005 But Didn’t Get Cranking Until 2006. During The Farm’s Quiet Periods In The Mid-Summer And The Winter They Fire Up The Stills And Make Whisky From Their Own Harvest. The Purity And Intensity Of These Whiskies Is Unmatched. The Care And Attention To Detail Is Extraordinary. Often, They Produce Only About 100 Casks/Year. That’s Less Than A Single Shift’s Production At Many Large Distilleries. This Batch Was Produced By Marrying Four Casks, All Filled In June And July 2009. While Previous Batches In The US Have Been Exclusively Bourbon Cask Matured, This Is The First Vatting To Bring Sherry Into The Mix. It Is A First Fill Oloroso Butt And Three First Fill Bourbon Casks Yielding 1680 Bottles At 46% ABV And Bottled Exclusively For The US Market.

Description

This limited edition of Daftmill 2009 is made from the barley variety Optic which was cultivated in the fields of the farm and harvested the last week of August 2006. The barley is then stored on the farm before being malted in Alloa in the summer of 2007. The first fill Oloroso Sherry butt and three ex-Bourbon barrels were chosen by Wine and Spirit Merchants Berry Bros & Rudd. It was distilled and filled in the first two weeks of August 2009, then bottled in 2020. 1,785 bottles were produced.

The nose is initially quite shy, and this dram benefits from a little breathing time in the glass, those with patience are rewarded with a harmoniously balance of fresh tropical fruit reminiscent of mango and cola cubes with thicker aromas of dried figs and cigar boxes.

The palate is wonderfully spicy giving notes of clotty dumpling and lemon zest developing into something smoother with toffee notes and Fraser burgh butteries.  The finish is exceptional with the ex-sherry casks really shining through and waves of fresh fiery gingerbread lingering.
